Recipe of the Month
Maine Blueberry Nut Bread
2 eggs                                    4 tsp baking powder
1 c sugar                                1 tsp salt
1 c milk                                 1 c Maine blueberries
3 tbsp melted shortening       ½ c broken nutmeats
3 c sifted flour

Beat eggs. Add sugar and beat thoroughly. Add milk and melted shortening. Sift flour, measure and stir together with baking powder and salt. Add to liquid ingredients. Stir only until blended. Fold in blueberries and nutmeats. Turn into well greased 9 x 5 x 3 loaf pan. Bake 1 hour at 350° degrees. Turn onto rack to cool. Wrap and store.
This loaf, like all loaves of quick bread, freezes very well. If you have Maine blueberries in your freezer, use these in making this loaf. When adding blueberries from the freezer, add them just as they are, frozen hard.


Curried Tortellini with Green Beans and Squash
1-⅓c chopped onions
⅔ c chopped red or green bell peppers
2 tsp minced garlic
1 tbsp vegetable oil
1 tsp curry powder
2 c halved Italian, or regular, green beans
2 c cubed (½ inch) peeled, seeded butternut, or acorn squash
¼ c water
1 c reduced-fat coconut milk
2 pkgs (9 oz each) fresh mushroom, or herb, tortellini, cooked, warm
    salt & pepper to taste
3 tbsp finely chopped cilantro

Sauté onions, bell pepper, and garlic in oil; in large skillet 4 minutes. Stir in curry powder; cook 1 to 2 minutes longer.
Add green beans, squash, and water to skillet; heat to boiling. Reduce heat and simmer, covered until

vegetables are tender and water gone, 10 to 12 minutes.. Stir in coconut milk and cook over medium heat until hot, 2 to 3 minutes. Stir in tortellini. Season to taste with salt and pepper.
Spoon pasta mixture into serving bowl, sprinkle with cilantro.

A Bottle of Wine
  For all of us who are married, were married, wish you were married, or wish you weren't married, this is something to smile about next time you open a bottle of wine.
Sally was driving home from one of her business trips in Southern Arizona when she saw an elderly Navajo woman walking on the side of the road. As the trip was a long and quiet one, she stopped the car and asked the Navajo woman if she would like a ride.
With a silent nod of thanks, the woman got into the car. Resuming the journey, Sally tried in vain to make a bit of small talk with the old woman. But the woman just sat silently, looking intently at everything she saw, studying every detail, until she noticed a brown bag on the seat next to Sally.
"What's in the bag?" asked the old woman.
Sally looked down at the brown bag and said, "It's a bottle of wine. I got it for my husband."
The Navajo woman was silent for another moment or two. Then speaking with the quiet wisdom of an elder, she said, "Good trade."

Good - An Erie, PA policeman had a perfect spot to watch for speeders, but wasn't getting many. Then he discovered the problem. A twelve-year old boy was standing up the highway with a hand painted sign, which read RADAR TRAP AHEAD!! The officer then found a young accomplice down the road with a sign that read TIPS!! and a bucket full of money. (And we used to sell lemonade!)
